For example, I put sliced apples, a teaspoon of local honey and crushed rice krispies on a plate for each boy. They dip the apples in the honey and then role them in the rice krispies. It's a great after school snack, and they literally lick the plates clean.

Southwest Chicken
Bake chicken breat covered in bbq sauce for 1 hour on 350. Take out and put slices of provolone cheese on the chicken and broil 3 minutes (or just let melt). Then serve with rotel tomatoes on top.

Our favorite kid-friendly vegtable: roasted carrots w/ honey glaze. slize 1 or 2 lbs carrots on the bias, toss in a bowl with 1 T olive oil per pound. Spread on baking sheet and roast 35-45min at 425 (some edges will blacken a bit - best part). Dump back into bowl and toss with 1 T honey. Yummy!

Quick, easy (healthy?) treat recipe:

Fruit Smoothies
Combine following ingredients in blender & blend until 'smooth'
1 cup low-fat vanilla yogurt
1/3 orange juice
2 tablespoons honey
2 bananas
1-2 cups of your favorite fruit
(ex. strawberries, blueberries, raspberries, blackberries, pineapple, mango)

Toasted cheerios:

Melt a little butter in a pan. Pour in cheerios and brown them, sirring constantly so that they don't burn. Lightly salt and eat warm.

My kids really enjoy several breakfasts using oats.

Oatmeal with yogurt and applesauce stirred in.
Swedish oatmeal - 3T raw oats, 3T plain yogurt, sliced or diced fruit (or last night's leftover fruit salad), 1 tsp honey, and it can be easily spiced up nutritionally with 1 tsp wheat germ and 1 tsp ground flax seeds.

Mary- I love using ground flax seed. I sneak it into all kinds of kid foods- cereal, oatmeal, smoothies, muffins, brownies- you name it. Such a healthy source of fiber and other great stuff.

Lyndsay- Sounds healthy to me!

Naomi- that chicken sounds great!

Laurie- We're going to try those Cheerios when we get back- we have a plethora of Cheerios in the pantry that need to be eaten.

Sante Fe Soup (For Poor But Rich in LOVE Seminary Families)
1 packet ranch dressing
1 packet taco seasoning
2 cans corn (drained)
2 cans black beans (drained)
1 can diced tomato (drained)
1 can pinto beans (drained)
1 can light kidney beans (drained)
2 cups water
Dump it all in the pot and let it cook on med-high for 30 mins. Great leftovers!! Really good when served with cheese and "light" sour cream (of course)!

This is similar to Erin's original recipe, but it is YUMMY and a new snack we just discovered.:

* 1 red or green Bartlett pear
* 1/4 cup pecans, chopped
* 2 tablespoons honey

Directions

1. Halve 1 red or green Barlett pear lengthwise, and core with a melon baller or spoon.

2. In a medium bowl, mix together chopped pecans and honey; mound onto pear halves.

3. Enjoy!
